Golden Garlic Soup

✨This recipe is an earthy, autumnal and warming staple in our home, we enjoy ours with crusty bread & homemade butter!

This recipe is so easy, simple and quick to make and if you have a cold coming on, it’ll fill your body with vitamins and good nutrients to (hopefully) woosh the cold right out of you!

Servings: 4

Ingredients

🍲 Soup

  • 20g butter

  • 1 large white onion

  • 16 fat garlic cloves

  • 1 large potato

  • Salt & pepper

  • 1 tsp ground tumeric

  • 200g white wine

  • 600g veggie stock

  • 60g parmesan cheese

    👩‍🍳 Let’s cook!

    1. In a large pot, heat the butter and let it melt over a medium heat, then add in your chopped onion and cook for 10-15 minutes.

    2. Now pop in your chopped potato and sliced garlic. Season with the salt, pepper, and turmeric - you must use black pepper to activate all of the benefits from the tumeric.

    3. Continue cooking for a further 10 minutes, then deglaze with the white wine and add your stock.

    4. Bring to the boil, then reduce to low and let simmer (partially covered) for about 30 minutes, then ladel into your favourite bowls.

    5. Grate over the parmesan & serve with chopped chives & parsley.
