Cheese Scones

✨Well my goodness gracious, I always get asked for this cheese scone recipe, and once you try it, you’ll understand exactly why! I do feel like a good scone recipe should be under everyone’s belts, and this is mine - so feel free to use it to impress all of your friends!

Ingredients

đź§€Cheese scones

  • 350g plain flour

  • 10g baking powder

  • 7g fine sea salt

  • 120 g unsalted butter, cold and cubed

  • 100g grated red Leicester cheese

  • 100g sharp cheddar cheese

  • 225 g buttermilk, plus more if needed

  • 2 egg yolks

  • Maldon sea salt flakes

  • 30g grated red Leicester cheese

👩‍🍳 First Things First: Mis en place

A French term for everything in its place - in other words, organise all of your ingredients to ensure an efficient process while we cook something delicious!

👩‍🍳 Let’s cook!

  1. Whisk flour, salt, and baking powder in a the bowl of your food processor until it’s fully incorporated, then add your cold butter and using the pulse option, whizz until that’s fully incorporated, too.

  2. Using a rubber spatula, stir in the grated cheese.

  3. Make a well in the flour mixture and pour in your buttermilk. Fold it together using the rubber spatula until it forms a shaggy dough.

  4. Lightly grease your work surface and rolling pin with a neutral oil (I use vegetable), and roll the dough out until it’s 1” thick and use a cutter to cut out your rounds, placing them on a greased baking tray.

  5. Cover and refrigerate until the oven has preheated to 200°C, and brush the tops (not the sides) of your scones with the egg yolks, and sprinkle with some Maldon sea salt and an equal amount of cheese.

  6. Bake for 18 minutes and serve warm with some homemade butter!
